Happy Earth Day, friends!
In honour of our planet’s special day, I thought I’d raise a mason jar to Mother Nature and blend up some plant fuel.
I tend to reflect A LOT on my carbon footprint…
From the surplus of plastic packaging in diabetes supplies to the steady stream of disposed glucose test trips, my personal pharmacy contributes to some serious emissions.
There are also the days when my elusive reusable canvas grocery bags escape me (okay, most days), and I end up cradling my goods to the car in an effort to save even one plastic bag from the landfill. Or when I don’t compost. Or forget to bring my personal to-go mug to the coffee shop.
Rather than dwelling on these first world probs, I try to flip the switch on my feelings of anguish.
Instead, I focus on gratitude for having access to life-sustaining diabetes supplies.
For local/organic/sustainable food, clean water and fresh air.
For the ability to plant a seed and see it flourish.
For having the privilege to make conscious, ethical choices that will collectively impact the future of humanity.
This is big stuff.
But back to my little green smoothie recipe for ya…
A hand-mixed smoothie isn’t in my wheelhouse (I still rely heavily on technology), so I opted for the energy-efficient mode on my blender…baby steps, right?
Ingredients (organic and/or local):
1 big handful of baby spinach
1/2 cup water (or nut milk)
1 cup berries (blue rasp straw)
1/2 cup chopped cuke
1 medium banana
1 scoop vanilla protein powder (I used Genuine Health‘s fermented vegan proteins+)
1 tbsp chia, hemp and milled flax seeds
1/2 tsp Chaga mushroom powder (like Harmonic Arts)
1/4 tsp chlorella powder (optional)
2-3 fresh mint leaves
Ice (to desired consistency)
